NO BAKE STRAWBERRY CHEESECAKE
If you love cheesecake then you will love this fuss-free recipe. This is really a quick dessert to throw together and it's really delightful to eat.
* You can substitute the white sugar for Stevia artificial sweetner
If you have time, add a biscuit base to the bottom of each ramekin, if you would like a bit of a crunch with this cheesecake.
Ingredients: Serves 4
250g Smooth cream cheese
1 Teaspoon vanilla essence
400g Strawberries, cut in half
6 Tablespoons sugar OR Stevia artificial sweetner.
Mint for garnish
Add 250g of the strawberries, cream cheese, sugar and vanilla essence into a bowl. Using an electric beater, beat well until the strawberries are well combined with the cream cheese.
Divide the remaining 150g strawberries into 4 ramekins. Top with the strawberry cheesecake.
Garnish with a few strawberries and a mint leaf or two.
Refrigerate for 2 hours before serving
