Grilled Pineapple with Mint Syrup
2 medium pineapples, cut into quarters
For the syrup
200 ml water
100 ml white sugar
juice and zest of 1 lime
3 mint sprigs, reserve a few for garnish
1.Place all the syrup ingredients in a saucepan over medium heat and simmer until reduced slightly, approximately 5-8 minutes
2.Place the pineapple on the grill and cook fr 2 minutes, turn and sear the other side
3.Serve pineapple wedges with syrup poured over, garnish with mint leaves and serve with ice cream
