How to make it
Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.
RAINBOW COLOR DROPS OF FOOD COLORING
Purple 9 red and 6 blue drops
Blue 12 drops
Green 12 drops
Yellow 12 drops
Orange 12 yellow and 4 red drops
Red 18 drops
Line 16 muffin pan wells with baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.
Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.
Basic Cupcakes recipe
Here is a basic recipe for cupcakes which you can get really creative with
150g room temperature butter
150g caster sugar
175g self raising flour
2 tablespoons cocoa powder
1 teaspoon vanilla essence
Pre-heat the oven to 180C and place cupcake holders into a muffin tin. Beat the eggs lightly in a mixing bowl, then add all of the rest of the ingredients. (no need to sift the flour) Beat with an electric beater for about 2 or 3 minutes, until light and creamy. Fill the cupcake holders evenly, about 3/4 full. Bake for 20 minutes until they have risen and are firm on top. Allow to cool in the muffin tray before icing
