PEPPERMINT SLICE



PEPPERMINT SLICE

Because it is quite sweet... I make it thin but if you would like it thicker you can double the mixture.
 

For the base you will need:
1 cup of flour, 1 heaped tablespoon of cocoa, 1/2 cup of brown sugar, 1/2 cup of coconut and 125g of melted butter.

 For the filling you will need: 2 tablespoons of milk, 20g of butter, 2 1/4 cups of icing sugar, peppermint essence to taste I used 1 teaspoon and optional 2 drops of green food coloring.

 For the icing you will need: 20g of butter, 1 1/2 cups of icing sugar, 1/4 cup of cocoa and hot water around 2 or 3 tablespoons enough to get a thick but pourable consistency. 


 Preheat oven to 180°c on bake.


 Sift together the flour and cocoa and add the sugar and coconut. Mix in the melted butter till combined. Press into a greased slice tin and bake for 15-20 minutes. When cooked let it fully cool. To make filling combine milk and butter in a pot and heat to melt butter, once butter is fully melted turn off heat and mix in icing sugar and peppermint essence till smooth. If you like you can add some green food coloring. Spread over your cold base and into fridge to set. 


 To make icing: melt butter and add in icing sugar, cocoa and water and mix till smooth, pour over and spread evenly then set in fridge overnight before cutting
