Oven-roasted Tomatoes

Oven-roasted Tomatoes
Serves 4
6 ripe tomatoes cut in half horizontally
2 tbs olive oil...
1 tbs balsamic vinegar
1 clove garlic, peeled and thinly sliced

8 to 10 sprigs of fresh thyme
few sprigs of fresh rosemary
salt and black pepper
Preheat oven to 150°C. Put the olive oil, balsamic, thyme, rosemary and garlic into a shallow baking dish. Place tomatoes cut-side down and bake for 2 hours until soft and wilted. Serve as a side dish.
