Nataniël: DELICIOUS GREEN FIG & BRANDY MUFFINS
1/2 cup soft butter
1/2 cup sugar
1/3 cup honey...
2 eggs
1 1/2 cups buttermilk
2 1/2 cups self-raising flour
1 tsp baking powder
1 tsp salt
1 cup natural oats
4 preserved green figs, chopped
1/2 cup raisins
zest of 1 lemon, finely grated
1/2 cup dark chocolate chips
4 tbsp honey
3 tbsp brandy
2 tbsp water

Cream butter, 1/3 cup honey and sugar together
Whisk in eggs
Whisk in buttermilk
Mix flour, baking powder and salt together
Mix in oats
Add figs, raisins, zest and chocolate chips and mix
Divide batter among 12 medium muffin pans
Bake in oven at 180˚C for 20 minutes or until golden brown
Heat 4 tbsp honey, brandy and water in small saucepan
Pour over hot muffins
Let cool for a few minutes, remove from pans and serve lukewarm
