Pancake mince/sausage muffins



Pancake mince/sausage muffins
250gr lean beef mince or sausages cut into small pieces
1 and ½ cups milk
4 tablespoons white vinegar ...
2 cups flour
4 tablespoons white sugar
2 teaspoons baking powder (bakpoeier)
1 teaspoon baking soda (koeksoda)
1 teaspoon salt

2 eggs
4 tablespoons butter, melted
1 teaspoon vanilla
Syrup or honey for drizzling
Pre-heat your oven to 200C .
Fry mince or sausages until cooked
In a small bowl combine milk with vinegar and allow it to sit for 5 minutes.
In a large bowl sift together flour, sugar, baking powder, baking soda and salt. Add in eggs, milk, vanilla and melted butter and stir to combine.
Stir in cooked mince or sausage pieces
Prepare muffin tins with non-stick cooking spray or line them with paper liners
Fill each muffin cup 2/3 of the way full. Bake for about 15-16 minutes, or until done. Drizzle the muffins with syrup or honey and serve immediately.
