Naartjie loaf




Naartjie loaf

Ingredients

2& 1/2 cups of cake flour ...
150 grams of soft butter
1cup of sugar
3 eggs at room temperature
2 teaspoons of vanilla essence
2 teaspoons of baking powder

The zest of 4 naartjies and the juice of 3 naartjies . Or 1&1/2 teaspoons of dried naartjie peel grinded .

Method

Beat your butter and sugar for 2 minutes , add your vanilla and one egg at a time and mix further for 3 minutes . Add the rest of the ingredients and mix just until well combined . Spoon into a greased loaf pan and bake for 45 minutes in a preheated oven at 180 degc ..or until golden brown and when you stick in a tooth pick it comes out clean . Remove from oven and allow to cool before removing from pan . Drizzle over some lemon icing .

For the lemon icing . Add a tablespoon of fresh lemon juice to a cup of sifted icing sugar and stir ..if you want it more runny add more lemon juice ..if you want it thick add less lemon juice .

This recipe you can use for round cakes , bundt cakes and cupcakes and muffins .
