Tasty bacon and cheese bites

Makes 12 standard
30 ml cooking oil
125 g streaky rindless bacon, coarsely chopped
250 ml (140 g) Snowflake cake flour
8 ml Snowflake baking powder
2 ml salt
2 ml mustard powder
375 ml (150 g) grated Cheddar cheese
30 ml chopped fresh coriander
1 extra-large egg
125 ml milk
30 ml cooking oil
paprika for sprinkling
1. Heat oil in a small, heavy-based frying pan. Add bacon and fry until crisp. Remove from heat and leave to cool slightly.
2. Sift flour, baking powder, salt and mustard powder together. Add bacon, cheese and coriander and mix well.
3. Whisk egg, milk and oil together. Add to dry ingredients and mix until just combined.
4. Place paper cups into a muffin pan. Spoon mixture into paper cups, filling each to two-thirds full. Sprinkle with paprika. Bake in a preheated oven at 180 °C for 12- 15 minutes. Serve warm.
