Mexican Huevos Rancheros




Mexican Huevos Rancheros
serves 4
Ingredients
4 flour tortillas or 4 slices of white bread
a little butter
1 x 410gr All Gold Mexican flavor chopped tomatoes
4 eggs
1 avocado
smoked paprika
a few chili flakes – optional
salt/pepper
fresh coriander
Method
If you are using a normal oven, preheat it to 180C. Butter 4 small ramekins and if you are using bread, cut the crusts off and butter the bread too. Line the ramekins with the tortilla or bread and spoon about 2 tablespoons of the tomatoes in the ramekins. Break open an egg  on top of the tomato mixture. Season with salt, pepper and a little smoked paprika. Bake in the Air fryer for about 4 minutes or in the normal oven at 180C until the eggs are cooked. If you are in need of something more substantial, sprinkle some grated mozzarella on the top and bake for 1 minute more.  Gently remove from the ramekins and place on a plate. Top with more of the tomato sauce, some chopped avocado and fresh coriander.
