Flake and Berry Chocolate Cake recipe




Flake and Berry Chocolate Cake recipe
 Ingredients
 4 extra large eggs ( room temperature)
 1 cup of sugar
 1&1/2 cups of sifted plainflour
 3/4 cup of vegetable oil
 1cup of warm water
 1/2 a cup of cocoa powder
 1 teaspoon of baking soda
 2 teaspoons of baking powder
 1 tablespoon of vanilla essence
 For filling of cake and decorations .
 25 Flakes
 Strawberries and raspberries
 1 tub of cream
 1 tub of double cream
 1 tablespoon of cocoa powder
 1 tablespoon of vanilla essence
 2 tablespoons of icing sugar

 Method
 Chocolate cake
 With electric mixer , whisk eggs and sugar until light and creamy , about 3-4 minutes . Add the oil and vanilla essence , mix for few seconds , now put the cocoa powder in the warm water and stir until well combined and cocoa is completely dissolved in the warm water , pour the cocoa water and dry ingredients in the bowl now mix with a spatula or spoon till well combined
 Pour batter in two buttered/ greased round baking pans and bake on 190 degrees in preheated oven for 25 minutes , check with toothpick or knife to see if it's done baking , it will come out clean when you insert into cake . .

 Vanilla cream
 Whip with electric mixer the cream , double cream , icing sugar , vanilla essence and cocoa powder until stif peaks form , remember this will happen very quickly because of the double cream , so don't over whip .

 Cool completely in pan , take out and put in fridge to get extra cold for half an hour before decorating . You may bake this cake a day ahead . Cut both sponges horizontally and fill/ spread with some of the cream , you may add some raspberries at this stage . Now repeat this process of spreading cream and stacking of each layer cake . Now spread and cover the entire cake with cream ensuring that the sides of cake is spread thinly with the cream. Place and press flake logs all around the cake and put all the berries on top .
 Now place in fridge for half an hour before serving .
