Bella Caesar Salad




Bella Caesar Salad

Ingredients:
2 medium heads Cos lettuce
10 strips of crispy bacon
2 chicken breasts – pan-fried or grilled, and cut into strips
12 Anchovy fillets
Croutons of three slices of bread
Parmesan shavings to taste
Dressing:
2 tbl mayonnaise
2 tsp Dijon mustard
2 large cloves of garlic
½ cup lemon juice
1 tsp maldon salt
½ tsp freshly ground black pepper
1 ½ cups mild olive oil
½ cup grated parmesan cheese
Layer the Bella Caesar in the order of the ingredients listed above. To make the dressing, add all the ingredients in a food processor except the olive oil and parmesan, and pulse for a few seconds. Slowly add the olive oil while the food processor is running. Once all the oil is added, add the parmesan cheese and pulse until smooth. Drizzle the dressing over the salad. Garnish with micro herbs and edible flowers.  *Edible flowers can be bought from Woolworths, but if you have pansies, borage or nasturtiums in your garden, they will work just as well.
