Sausage muffins

Sausage muffins

Makes 12 standard
500 ml (280 g) Snowflake cake flour
15 ml baking powder
3 ml salt
2 ml freshly ground black pepper
125 ml (50 g) grated Cheddar cheese
3 Frankfurter sausages, coarsely chopped
2 extra-large eggs
250 ml milk
60 ml cooking oil
  1. Sift flour, baking powder, salt and pepper together. Add cheese and sausages.
  2. Whisk eggs, milk and oil together. Add to dry ingredients and mix lightly with a spoon until just combined. Do not overmix; mixture should still be lumpy.
  3. Spoon mixture into greased muffin pans, filling each to three-quarters full.
  4. Bake in a preheated oven at 200 °C for about 20 minutes, or until golden brown. Turn out onto a wire rack to cool.
