Maize meal vetkoek

 Preparation time: 15 minutes
Cooking time: 10 minutes
 Makes about 24

30 ml (2 Tbsp) cooking oil
1 medium onion, finely chopped
1 red or green pepper, seeded and finely chopped
1 clove garlic, crushed
250 ml (1 cup) Snowflake cake flour
8 ml (1½ tsp)  Snowflake baking powder
5 ml (1 tsp) salt
250 ml (1 cup) Iwisa maize meal
15 ml (1 Tbsp) chopped fresh parsley or 5 ml (1 tsp) dried
2 ml (¼ tsp) paprika
1 extra-large egg
200 ml (¾ cup) milk
cooking oil for deep-frying
1. Heat oil in a medium, heavy-based saucepan. Add onion, pepper and garlic and sauté for a few minutes until soft. And fry for 1 minute. Remove from heat and set aside to cool slightly.
2. Sift flour, baking powder and salt together. Add maize meal, parsley and paprika and mix well.
3. Add onion mixture to dry ingredients and mix well.
4. Whisk egg and milk together. Add to flour mixture and mix until well-combined.
5. Heat oil in a small, heavy-based saucepan. Gently drop heaped tablespoonsful of dough into hot oil. Turn constantly and deep-fry until done and golden brown. Remove from oil and drain on paper towel. Serve with butter and cheese.
