Sharon-fruit jam




To make Sharon-fruit jam, remove the leaves and upper parts of 1kg of fruit.

Halve the fruit and, using a sharp knife, cut into 1 x 2cm strips.

Place in a glass bowl and sprinkle with 500g sugar.

Thinly slice 1 unpeeled lemon, add to the bowl and mix.


Cook in the microwave for 8 minutes, remove and stir. Cook for another 8 minutes, remove and stir.

Continue cooking for 4 minutes at a time, until the desired consistency is reached. Cool and transfer to a jar. Keep refrigerated.
