Ingredients
250 ml self raising flour250 ml caster sugar
6 eggs – separated

the zest of 1 orange
3 un-peeled oranges – sliced thinly and pips removed
125 ml sugar
30 ml water
Method
Prepare the orange slices first. Pour the 125ml sugar and the water into a big sauce pan and heat on the stove until the sugar has melted. Increase the heat and allow the mixture to become a caramel color. Add the orange slices and leave them to brown slightly. Remove from the pan and place in the bottom of a ring pan that you have sprayed with Spray ‘n Cook. Preheat oven to 180 C. Place half the caster sugar in a mixing bowl and add the egg yokes. Mix until creamy and light in color. In another bowl, whisk the egg whites until it forms stiff peaks and then add the sugar and whisk for another minute. Mix the two mixtures and fold in the flour a little at a time. Pour the batter over the orange slices in the ring pan and bake for 30 minutes. When the cake is done, remove from the tin and cool on a wire rack. Serve with cream or a spoonful of thick Greek Yogurt.
PS. My cake rose beautifully in the oven, but when I removed it from the tin, I think the weight of the orange slices cause the cake to sag a little. Nevertheless, it was delicious!
