Warthog spare rib.
3kg warthog ribs
1kg crown brine mix
5.5 litre ice-water meister club spare rib marinade.
1. Mix crown brine mix with ice-water
2. Immerse ribs in brine for 12 hours
3. Remove from brine and hang in cool place to dry
4. Optional: can be smoked too.
PREPARATION:
1. Heat oven to 160 c
2. Place in oven dish with 500 ml water pre-cook for 2 hours
3. Remove from oven and baste with rib marinade
4. Grill for 20 min in oven or over medium coals
5. Serve with potato chips
