Hierdie Groen tamatie chutney resep kom uit 'n boekie waar die mense nogal ken van lekker chutney's maak. Hoop die reseppie werk ook vir jou:
2.3 kg green tomatoes
450 g onions
1 tablespoon salt
225g seedless raisins
225 g sultanas
28 g root ginger
4 red chillies
1 tablespoon whole black peppercorns
12 cloves
570 ml vinegar
450 g Demerara sugar.
Wash & finely chop tomatoes & onions.
Place together in bowl, sprinkle with salt and leave for an hour.
Transfer into pan with raisins and sultanas. Bruise the ginger and chillies and put with the other spice into a piece of muslin, tie firmly and add to the pan with the vinegar.
Bring to the boil then switch down to a simmer and add sugar, stirring frequently until dissolved.
Continue stirring and press onto the muslin bag until thickened. Remove the muslin bag. Pour into hot sterilized jars and seal. (Easy jams, chutneys and preserves)
