QUICK MIX CHEESY CORN MUFFINS
Ingredients:
2½ cups of self-raising flour
1 tsp salt
200 g grated cheddar cheese
1 can KOO Whole Kernel Corn, well drained
A handful of fresh parsley
1 cup of buttermilk or plain yoghurt
100 ml sunflower oil
1 extra large egg
Kitchen gadgets:
Large mixing bowl, wooden spoon, muffin tray
Method:
1. In a large mixing bowl, combine flour and salt.
2. Add the cheese, corn and parsley.
3. In a jug, combine buttermilk or yoghurt, oil and egg.
4. Add to the flour and cheese mixture and stir with a wooden spoon till just combined. Don't over stir.
5. Spoon into a sprayed muffin tray and bake in a preheated oven at 200°C for 20 minutes.
