• 1 medium mashed very ripe banana
• ¼ cup ground flaxseeds
• ½ cup honey
• ½ cup creamy peanut butter
• ½ teaspoon vanilla extract (optional)
• 3 cups old fashioned oats
Instructions
1.Preheat oven to 350 degrees F (176C). Lightly spray the cups of a muffin tin with non-stick cooking spray.
2.In a large bowl, whisk together the mashed banana and ground flaxseeds until combined. Let sit for 1 minute.
3.Add the honey, peanut butter, and vanilla extract and whisk until well-mixed.
4.Stir the oats into the mixture until thoroughly combined.
5.Evenly divide the oat mixture among the 12 muffin cups.
6.Bake for 15 minutes, remove from oven, and allow oatmeal bites to cool in the pan.
7.Store in an airtight container for up to 5 days.
