Banting Quiches with Bacon and Blue Cheese
makes 12 mini quiches
Ingredients

For the crust
125 ml melted butter
2 eggs
5 ml curry powder
200 ml coconut flour
3 ml salt
Method
Pour the melted butter into a mixing bowl and add the eggs, salt and curry powder and mix well. Add the coconut flour and mix until you have a workable dough. Divide the dough into 12 balls. Spray a muffin pan with Spray ‘n Cook and place a dough ball in each muffin hole. Use your thumb to press the dough to make a casing for the quiche halfway up the muffin hole.
For the filling
2 x 150 g Fairview Full Fat Yogurt
4 eggs
250 ml cream
250 ml grated cheese
50 g Fairview Blue Tower
5 ml smoked parika
3 ml salt
3 ml black pepper
200 g streak bacon – fried until crispy and chopped finely
Method
Mix the eggs, yogurt, salt, pepper and cream together. I like to do it in a jug, it makes pouring easier. Now, take about a teaspoon of the grated cheese and place in every muffin casing. Crumble a little blue cheese on top of the cheddar cheese in each hole. Now pour the egg mixture into each muffin hole. Lastly top with some crispy fried bacon bits and a sprinkling of smoked paprika.
Bake for about 15 minutes or until the quiches are soft but firm to the touch. Remove from the muffin pan and cool.
