ORANGE CAKE

ORANGE CAKE
60g butter , chopped
3 teaspoons grated orange rind
1 cup castor sugar
2 egg
1 cup self-raising flour
2 Tablespoon plain flour
1/3 cup ( 80 ml ) milk
Grease 14 cm X 21 cm loaf pan , line base and sides with baking paper .
Combine all ingredients in small bowl , beat with electric mixer until mixture is smooth and changed in colour .
Pour mixture into prepared pan . Bake in moderate oven 180 C about 40 minutes . Turn onto wire rack to cool .
Top cool cake with Passion fruit cream.
PASSION FRUIT CREAM
300 ml thickened cream
1 Tablespoon castor sugar
2 Passion fruit
Beat cream and sugar in bowl with electric mixer until soft peaks form , fold in Passion fruit pulp .
