Bacon & Mushroom Pasta

Recipe by Devin Hogan from SMAK Delicatessen & Restaurant!

30g butter...
120g diced bacon
40g onion, chopped
80g button mushrooms, roughly chopped
300ml cream
4g parsley, chopped
Salt to taste
Pepper to taste
Parmesan to finish

1) Over a medium heat, fry the bacon in the butter, add the onions and continue to cook until onions are translucent
2) Add the mushrooms and fry until cooked then add the cream and bring to the boil. Season to taste.
3) Reduce the cream slightly then add the parsley and cooked pasta (strained) to the sauce.
4) Toss the pasta in the sauce (try not to stir it as it can break the pasta – rather move the pan forwards and backwards to mix well)
5) Serve with grated parmesan
