Jungle Oat Bran breakfast pancakes

Ingredients
1 extra large egg
5 ml oil
1 ml vinegar
250 ml milk
180 ml cake flour
1 ml salt
5 ml baking powder
60 ml Jungle Oat Bran
Instructions
1. Beat the egg, oil, vinegar and milk together.
2. Stir together the flour, salt, baking powder and Jungle Oat bran.
3. Add the milk and egg mixture to the dry ingredients and beat until smooth. Allow to stand for 30 minutes.
4. Heat a large non-stick frying pan over medium heat and brush lightly with oil. Use a ladle of batter for each pancake. Cook the pancakes for 2 minutes, until bubbles appear on the surface, then turn over and cook for 1 minute. Keep warm on a plate while you cook the rest. Serve with berries and Greek yoghurt and maybe a drizzle of honey or cinnamon sugar.
