Bacon bites
Serves: 6 - 8
Ingredients
1 roll of puff pastry
150g of bacon bits
20ml oil
300g red onion, finely chopped
125ml All Gold Barbeque Sauce
150ml milk
3 large eggs
75g sour cream
10ml fresh basil, finely chopped
100g cheddar cheese, grated
Preparation method
Preheat oven to 180°C. Roll out the puff pastry on a lightly floured surface and cut out circles to fit 24 small muffin indents. Heat the oil and fry the bacon bits until soft and cooked through. Remove from heat and allow to cool. In a bowl, add the bacon (with the oil in which it was fried) milk, eggs, sour cream and basil. Mix well and season with salt and pepper. Divide the mixture between the pastry cases. Top with cheese and bake at 170°C for 20 minutes or until light golden brown.
Serving Suggestion
This may be served hot or cold.
