BACON FRENCH TOAST BUNS
Makes 12
Ingredients:
200g Enterprise streaky bacon3 eggs
165ml milk
140ml oil
500g vanilla muffin mix
1 tsp ground cinnamon
6 slices white bread, crusts removed and cubed
1-2 Tbs cinnamon sugar
Golden syrup
Method:
Start by making the crispy bacon
bits. Chop the streaky bacon into cubes and fry in a hot pan until crispy.
Drain well on paper towel and set aside.
Whisk 2 eggs, 140ml milk and the
oil together.
Add the muffin mix and 1 tsp
cinnamon and beat for 1 minute or until smooth.
Pour the muffin mix into greased
muffin trays (fill halfway).
Toss the white bread cubes and
cinnamon sugar until coated. Stir through the remaining 1 beaten egg and 1 Tbs
of milk until coated.
Top each of the muffin batter
with the French toast mix and sprinkle with the bacon.
Bake at 180C for 12-15 minutes
or until golden.
Serve warm, with butter and
drizzled with golden syrup.
