Tin Cup Breakfast
Tin Cup Breakfast. The perfect way to use your left over braai meat for breakfast the next day.
What you need,
2 tin mugs
4 eggs...
Flat bottom pot
Fillings of your choice.
Fillings of your choice (or what’s on hand). Anything from onions and crispy bacon to cherry tomatoes and cheese – left over Boerewors always works well. Remember if it needs cooking, do so before you start.
Wipe the inside of the tin mug with olive oil. Add the ingredients of your choice. Break two eggs over the top. Place the mugs inside your flat bottom pot and pour water around them until the mugs are half submerged.
Put the lid on and put the pot on the fire. Bring the water to the boil. This method of poaching an egg takes about four to five minutes, but keep checking. When the egg is done to your satisfaction, eat directly out of the mug with a spoon or fork
