Pink Fancies




Pink Fancies
Ingredients:
4 eggs...
1&1/2 cups of sugar
1 cup oil
2 tablespoon vanilla essence
2&1/2 cups of self raising flour
1 cup milk
1 teaspoon of baking powder
1/2 tsp salt

For Coating
2 cups of fine coconut
2cups of hot water
1 cup of fine apricot jam
1 teaspoon of pink food colouring
Method:
Preheat the oven to 180°C
Whisk the sugar and eggs in a mixer until light and fluffy about 3 minutes.
Add the oil and vanilla essence and mix again.
Add the flour to the mixture alternatively with the milk and mix till combined .
Pour the mixture into a rectangular or square greased baking tin and bake for 30-35 minutes at 180°C
Allow to cool and then cut off any crusts. Now, cut the sponge into small squares, about 4cm x 4cm. Place in fridge for half an hour before coating .
Coating
Take 2 cups of hot water mixed with 1 cup of fine apricot jam , stir until the jam has dissolved into the hot water - wait to cool a bit and add 1 teaspoon of pink food colouring and stir - now take your squares and dip in jam syrup until all sides are covered. Be generous here and coat the sponges well!
Now roll each square in coconut.
We take it a step further and make it the fancy square cakes and decorate with piping vanilla cream and placing some caramel or berries , kiwi , chocolate or fruit jellies .
