Fruity Peanut Butter Crunchie Bars
(Makes 12–15)
You’ll need:
500 ml Jungle oats
125 ml cake flour
180 ml brown sugar
375 ml desiccated coconut
2,5 ml ground cinnamon
Pinch of salt
60 ml butter
30 ml golden syrup 10 ml bicarbonate of soda
90 ml milk
125 ml Black Cat crunchy peanut butter
2 packets Safari To Go snack packs (Tropical Twist flavour)
Method
1. In a bowl, mix all the dry ingredients together.
2. In a small pot, melt the butter and golden syrup together.
3. Remove from the heat and add the milk and peanut butter and stir well.
4. Mix the liquid ingredients into the dry ingredients using a wooden spoon.
5. Press the mixture into a paper-lined rectangular baking pan.
6. Bake at 160 °C until golden – about 25–30 min.
7. Leave in the pan to cool for 5 min., then turn out onto a tray.
8. Leave until just warm to the touch and then slice into squares or bars.
9. Store in an airtight container.
