Iced Rooibos Tea with Apple
Makes 1.25litres
Iced tea is refreshing on a hot day, but too much sugar Is not a good idea. We decided to use apple juice as a sweetener, but if you absolutely must, add 2 T (30ml) honey.
2 cups (500ml) boiling water
3-4 rooibos tea bags
2 T (30ml) honey (optional)
2 cups (500ml) apple juice
2 T (30ml) fresh lemon juice
2 cups (500ml) cold water
Measure boiling water into a 2 litre measuring jug. Add teabags - leave to draw for 3 - 4 minutes. Squeeze out the bags and stir in the honey until disolved. Add apple and lemon juices as well as 2 cups of cold water. Refrigerate. Pour into juice bottles for transport.
INA'S TIP:
The juice bottles with a core that can be frozen overnight keeps the Iced Tea nice and cold.
