Swiss roll

Swiss roll
What you will need:
4 extra-large eggs
¾ cup castor sugar
1 teaspoon vanilla essence
¾ cup cake flour
1 teaspoon baking powder
¼ teaspoon salt
Smooth jam of your choice
How to prepare:
1. Separate the eggs. Pre-heat the oven to 180˚C.
 2. Beat the egg yolks and slowly add the sugar, beating it until thick. Add the vanilla essence.
 3. Sift the flour and baking powder together and fold into egg yolk mixture.
 4. Beat the egg whites with the salt until it’s stiff. Fold the egg white into the batter.
 5. Line a Swiss roll baking pan with greaseproof baking paper and grease well.
 6. Pour the batter into the baking pan and bake for 15 to 20 minutes.
 7. Turn out immediately onto a damp cloth that is sprinkled with the castor sugar. Peel off the paper and spread the smooth jam and roll.
 8. Allow the Swiss roll to cool and sugar before serving.
