Sugar-Free, Wheat-Free Oat and Banana Bars




Sugar-Free, Wheat-Free Oat and Banana Bars
All ingredients are in a 1:1:1 ratio. If you use 2 bananas, increase the amount of everything else in the recipe to '2', if you use 6 bananas, increase everything by '6'....
Pre-heat oven to 350 degrees
I am starting with a 2 banana recipe, since it yields one 9 x 9 pan of bars or one dozen dropped cookies:
2 ripe bananas – overripe is fine – mashed in a large bowl
2 cups old fashioned oats – not quick cook, instant, steel cut or groats
2 Tablespoons cocoa powder
2 Tablespoons chia seeds (in health food section of grocery or a whole foods type store)
2 Tablespoons honey (optional)
2 Tablespoons dried cranberries or raisins (optional)
2 Tablespoons unsweetened flaked coconut (optional)
2 dashes cinnamon
Stir all ingredients in bowl with fork until well combined
Grease a cookie sheet or a 9 x 9 pan with coconut oil
Either drop cookies onto sheet with fork and form into patties or press mixture into the pan
Bake (180) 18 minutes – for larger batches, be sure to test dough. When it is firm and slightly browned at the edges, the bars/cookies are done.
Allow to cool, cut and enjoy!
