A delicious Cheesecake recipe
What you will need:
For the base:
100g unsalted butter
200g plain sweet biscuits
50g caster sugar
For the filling:
3 eggs, separated
200g caster sugar
500g cream cheese
2 tablespoons corn flour
2 teaspoons lemon zest
1 teaspoon vanilla extract
150g sour cream
How to prepare:
1. Heat the oven to 180°C and lightly grease a loose-bottomed cake tin. Line it with baking paper and stand on a baking tray.
2. Crush the biscuits until fine and mix with sugar, melted butter and mix for 30 seconds. Press into the base of the prepared tin and refrigerate for 30 minutes.
3. Beat the egg yolks until smooth, add sugar and beat until light and fluffy. Gradually add the cream cheese, followed by the rest of the filling ingredients.
4. Beat the egg whites until stiff and fold into mixture. Pour into tin and bake for 10 minutes. Lower the heat to 150°C and cook for another hour. If the cake appears to be over-browning, cover with foil
