SOETPATAT- EN PEERSOP

25 g butter
1 finely chopped white onion
750 g diced sweet potato
500 g (2 pears diced)
750 ml chicken/veggie stock
250 ml cream

fresh mint garnish


Cook onion, sweet potato and pear in butter.
Add stock, cook till soft.
Blend till smooth.
Add cream and reheat.
Salt and black pepper,
mint to garnish.
Soup can be frozen before adding cream.
