orange cake
Beverley Coetzer Hay
3 Eggs
1 cup Sugar
1 ½ cups flour
1 ½ teaspoons baking powder
3 Tablespoons butter
¾ cup milk
Pinch of salt
Method:
1. Melt butter in the milk and let it cool a little
2. Beat sugar and eggs well
3. Sift flour, baking powder and salt and add to the sugar and egg mixture
4. Add the melted butter and milk and mix well
5. Bake at 180 deg for +- ½ an hour (and golden brown)
Sauce:
½ cup sugar
¼ cup water
1 Tablespoon butter
¾ cup orange juice
Grated rind of one orange
Bring the ingredients to the boil and pour over cake (which has been pricked with a skewer) when it is removed from the oven and still hot
