250g Plain flour
1 Teaspoon 5g Salt
1 Dessertspoon (15ml) Olive Oil
150ml Water
Olive Oil, Salt and Black Pepper for sprinkling on top
Pre-Heat Oven to 200C/400F/Gas 6

2. Mix oil and water together
3. Add half to three quarters of the oil/water mixture to the flour/salt mixture and stir well to combine.
4. Gradually stir in the rest of the oil/water until the dough has become one large piece and no longer sticks to the bowl. Don’t worry if you reach this consistency before you’ve used all the oil/water, just discard the rest because you don’t want the dough to be wet.
5. Turn dough out on to floured surface and knead for 3 or 4 minutes until elastic in consistency
6. Roll out to 1/8th inch (3mm) thick, drizzle with olive oil, salt and black pepper
7. Cut into 2inch squares, place on lightly oiled baking sheet and bake in oven for 7-9 minutes until lightly browned.
